“If my life had a flavor, it would be coffee.”

I found this quote on Pinterest the other day, and it perfectly describes how I’m feeling on this cool Monday morning! Getting up early for the gym was a struggle, and the crisp air foreshadowing fall didn’t make it any better (summer, I already want you back!).

So, coffee helped. And so did this list from Joy the Baker: 11 Little Ways to Get Through This Monday. I especially love this: “…an after work situation is a lovely carrot to dangle in front of your face.” With that idea in mind, I’m looking forward to yoga, and then steak and a glass of wine this evening!

Plus, I just discovered what I’m going to do with all of the bananas in my freezer this week.

Weekly Menu July 21

I can’t even think about dinner right now.

I’m far too busy dreaming about the cookies I made last night: a mix of chocolate and coconut! They almost give the chocolate-and-peanut butter duo a run for their money. ALMOST.

And speaking of the best chocolate treats, apparently Snickers is the most popular candy in the country. Surprised? I clearly would have voted for Reese’s (which came in at third place).

Now that we’ve started Monday off on the right (sweet) note, we can discuss more substantial food like spaghetti squash with meat ragu and tequila lime shrimp. I have to admit that it’s been really difficult for me to leave soup off the menu the past few weeks. I mean, we are experiencing crazy high temperatures here, and I spontaneously made soup last week. Um, what? Poor Ryan was sweating while eating it. I guess my soup/stew/chili obsession from the winter is still lingering!

But aside from soup, I can’t wait to make the chicken tikka masala this week. I really haven’t experimented with cooking any Indian food, because the long list of ingredients usually scares me away. But this simplified version sounds so good!

Happy Monday!

From now on, I’m going to share a weekly menu with you all for dinner-time inspiration. I love looking at others meal plans, but I sometimes feel like they’re unrealistic or too complicated for week night recipes. So, my goal here is to share my real-life menu and hopefully provide you with ideas for your own. Please share your feedback or other ideas with me!

Weekly Menu

Monday: Spaghetti All’Arrabiata with Turkey Meatballs (recipe below)

Tuesday: Chicken Avocado Enchiladas 

Wednesday: Grilled Chicken with Asian Quinoa Salad

Thursday: Spinach Turkey Burgers with Baked Sweet Potato Fries

Friday: Homemade Pizza

The above ingredients are the basis of the turkey meatballs. I usually add in a few more spices like Italian seasoning and red pepper flakes too. Then, just mix it all together and form little balls (like below) and stick them in the oven!

Lean Turkey Meatballs

Ingredients:

  • 1 lb lean ground turkey meat
  • 1 egg white
  • 1/4 cup bread crumbs
  • 1 T olive oil
  • 1 T garlic salt
  • salt + pepper to taste, plus any other seasonings of your choice

Directions:

Preheat the oven to 350. Mix all of the ingredients together in a bowl. Form the mixture into balls and place in a baking dish. Drizzle with a little more olive oil and bake for ~20 minutes, until browned. Enjoy with this All’Arrabiata sauce.
